The Hilmar Cheese Company was formed in 1984 by twelve families involved in the dairy processing business. The founders’ aim in establishing the company was to maximize their harvested milk’s value. The milk that these dairy farmers harvested from their Jersey cows had a high solids content and they wanted to make the most out of their product. Studies conducted years prior to the company’s foundation suggested that milk coming from Jersey cows made excellent cheeses and so the founders of Hilmar Cheese wanted to take advantage.
After the company was founded, the owners focused their investments on product research; hiring an excellent staff and obtaining the latest technology to process the company’s products. In 1985, Hilmar Cheese Company finally produced its first packed cheese products. Five years after, the company expanded by adding a new processing area for cheese. In 1994, the company added facilities to process more milk and make more lactose and whey proteins.
In 1998, the company’s visitor center was completed. Soon after, the company welcomed guests from different parts of the world who wanted to be educated about the company’s operations. Two years later, Hilmar Cheese constructed a milk receiving facility. This new facility was built in order to accommodate more milk trucks, as well as to improve the efficiency of the company’s milk operations. In 2007, a new Hilmar Cheese processing plant was completed in the area of Dalhart, Texas. The company’s facility in Texas is the first one not located in the area of Hilmar. Two years later, Hilmar Ingredients was given recognition for being the year’s Dairy Exporter. In the same year, the company also celebrated its 25th anniversary.
