Grilled Artichoke Hearts in Extra Virgin Olive Oil - Barletta - Italy
The best violet artichokes from Puglia, in Italy, harvested and processed by hand in the traditional way during the right season, between May and June. All thorns and external leaves are removed and then the artichoke are cleaned with fresh water. After they are cooked in a solution of water, vinegar and salt then left in the open air for 12 hours. At the end they are preserved in our extra virgin olive oil and the jars pasteurized.- Baby artichoke heart from violet artichoke typical of the Puglia region in Italy
